While there are certain VPS and Dedicated Server accounts where you could change the server time, by default the server time is going to be either Eastern Standard Time or Pacific Time, depending on the location of your server.

If you have a shared or reseller plan, the easiest way to check is to go into your AMP and click on the icon for 'Technical Details'. An account that starts with 'biz' will be PST, while an account that starts with 'ecbiz' will be EST.

On a VPS or Dedicated server, please use this article to check (or change!) the server time in WHM. That way you can set it to Central Time and will no longer need to adjust.
