How do Joomla menus and pages work?

I'm from the old world of pages linked by menus. I have trouble understanding how Joomla menus "create pages" and I actually don't understand Joomla menus at all.

I am looking for an article about HOW Joomla menus work. I am looking for understanding and NOT really a how-to screenshot article about creating them.

Can you possibly suggest something? (I have read all the basic stuff nd still don't grock the concept.)
