MX Record when site not hosted by InMotion

My website is now hosted with Kajabi.

My mail will still be served by InMotion.

For my MX Record in CloudFlare, do I set the target as mail.domain.com. OR what I currently have it set to which is the actual server - secure295.inmotionhosting.com.

The A Record is currently set as mail.domain.com and the target is the IP address of the shared InMotion server.

Hello! We have a guide on this you can refer to, and you are on the right track. You'll want almost all of your records at CloudFlare to point to your new website on Kajabi, but the easiest way to keep your mail coming to and sending from your InMotion account is to create or edit the A record for mail, so mail.yourdomain.com (using whatever your domain is), and point that A record to the IP address of your InMotion account's cPanel. Then, point your MX record to mail.yourdomain.com, so that MX record will point to the mail subdomain pointing to your InMotion account. 

Also, please remember that you'll need to adjust any SPF Records to include your InMotion IP address, otherwise mail from that account may accidentally get marked as spam. Please be sure to check the CloudFlare documentation as well, as they sometimes have configuration utilities to make the process easier. Hope that helps!
